@ Acidhell, I imagine you'd be able to use a sous vide to control cooking temperature, they are very precise to .1 of a degree

@op, i'm impressed, i'd love to make some cheese and use it as a selling point at work but i just don't have the patience.
 
Also about 1k, maybe heating element termeter probably end thingy and a cobtroller. Must be some videos of how to make one.

Found details on how to turn a fridge into a meat dry curer. Was thinking play with temp and humidity and would work just as well to age cheese.

Why can't I own a house also seen ways of building a very cheap cold smoke house.

The long and short of this block is it got an infection, about June 2010 i dropped it out the fridge. Hadn't noticed the crack in the wax.

It's been slowly going blue ever since.

Just had a slice from the still chedar side and it's well aged :D Slightly dry texture but nice and shsrp. :)
