Chilli recipe

Here's my recipe to add to the mix

1 Ring Picante Chorizo
2 Red Onions
1 Kg Mince
Cumin
Cocoa Powder
Chilli Powder
2x Tins Chopped Tomatoes
1x Tin Kidney Beans

Rice

Chop the Onions and Chorizo, add to a pan with a small drizzle of oil.
Once the onions have softened add the mince and brown.
Once the mince is browned,
Add 3 level teaspoons of Cocoa powder
Add 3 heaped teaspoons of ground cumin
Add 3 level teaspoons of Chilli powder (Adjust for heat preference)
Add the two tins of chopped tomatoes and the tin of kidney beans.
Then add two can's worth of water, stir and put the pot on to simmer for as long as possible.
When serving the rice add a splash or two of lime juice to pep it up, you can also add some chopped fresh coriander to the rice as well.

Are you sure there should be as much cocoa powder as cumin in there? :confused:
 
No similar hence level and heaped teaspoons. If unsure go under and adjust to taste later on.

It's still not far away in overall quantity, and I was asking as I've never seen such a ratio before. However, as always, horses for courses I guess.
 
I much prefer slow-cooked diced beef chunks over mince.

I've even tried it with shredded beef which is awesome!
 
I always use whole chunks of meat (usually ox cheek) but I do want to experiment in combining that with super-browned mince.

An ox cheek chilli... I wouldn't even have thought of that. :D

The one time I had ox cheek at a fancy wedding though I counted it as one of the single most delicious things I ever ate.

I absolutely love ox cheek. Definitely right up there with the most delicious meat options (when cooked properly) :)
 
Damn you all... if on Friday I don't go out then I think it's going to be chilli making night. I have an epic hankering for one now. :p
 
From memory, chilli (traditional) doesn't have tomatoes in it.

It also doesn't have beans in it.

it is also not meant to be fiery hot. It has a rich flavor form different chilies, but a lot of the chilies are very mild with a lot of flavor, and just a little hotter chilies. Nothing worse than a chili that is so hot you can't taste the rich beef gravy, a real waste of tasty meat.
 
I'm another one in the diced beef rather than mince camp, to me and my family it makes a much nicer chilli as long as you cook it for long enough.

I've tried all sorts of recipes over the years but stick to a minimalist version now, the only ingredients are diced beef, onions, garlic, chipotle chillis, chopped tomatoes and kidney beans plus seasoning of course. I cook it very slowly on the hob for about 4 hours and end up with a lovely thick tasty sauce with soft chunks of beef in it.
 
Just a note, the pressure cooker version o Kenjis Chilli is awesome, won't cook it any other way now. Took me a total of 1 hour instead of 4-5 hours for the same result!
