Following on from Jonny69's wonderful cooking thread I thought I would post up a recipe for Crab, or more preciseley Dressed Crab.
We bought him from a Chinese supermarket in Greenwich where there are a selection of Asian and English live Crabs in tanks to choose from.
For his final moments I put him up on the dashboard of the van to see a bit of London on the way home and kept him in the bath for a few hours until we were ready for our starter.
After a while in the bath I became quite attached to the "little" whippersnapper and he was very strong indeed. My girlfriend decided to call him "Geoffrey" and he was certainly looking very tasty after befriending the fella and spending a few hours testing his strength with chopsticks

This is to make sure he is clean of any sand and general detritis picked up in the seas off Scotland
We prepared a large pan of boiling salt water and added Geoffrey to it for around 20 minutes:

After 20 minutes he was smelling really nice in the kitchen.

Remove from water, rip him open and serve with a hot sauce made up of diced garlic, ginger and bird's eye chilli's soaked in light and dark soy sauce, a splash of rice vinegar and some fish sauce. You can dip him in this or eat plain and the claws are the meatiest tasty part!
