@humbug but I'm one of those awkward outliers. My favourite games are Cities Skylines (threads very well but eventually bottlenecks on one of them) and Kerbal Space Program (totally limited by single thread, occasionally uses 2). For those specifically, I feel like this 8700K is about as good as I'll get. The 1600X was great vs my 2500K for MT, but was only a few percent on ST loads. And the motherboard was a total butt and had to go before it killed my m.2 drive with gpu waste-heat. It is possible that a 7700K would have done me just as well, but I feel like these 6-cores will probably last me 2-3 years even if I do pick up a new favourite game
The 1060 was originally a partner for that 2500K and it didn't seem so silly at the time, but I agree that it's now an absurd bottleneck for any normal type games, even at 1440p 60hz. I may up it to a 1070ti in a couple of months, if only so I can turn on the shinies in Ark Survival. Unless something new gets announced... I've heard rumblings of nvidia's 11-series for mobile not being far away.
