I don't have an E39 brochure handy so i can't give you a specific name, but the black one might suit yours best, given the black seats, dash and headlining.
 
Wood is where it's at :D ...come smoke a pipe and where a flat cap with me (why do I have a T-Rex song in my head right now ...hmm). We can all sit on a bench in a line and say things like "eee in my day!" ...and "when I were a lad" and "bye ekk"

Definitely do it, it feels so much warmer. Although you already know this, so do it already. With the new wheel and later the monitor, it will look great.
 
Not sure about the '80s Bentleys but the current ones actually have their 'wood' made from a specially cultivated underground fungus, when I went with my Dad to get his Flying Spur, the sales guy was telling us about it. The amount of work that goes into this fungus to turn it into what you see in a modern Bentley is amazing really.

I don't remember exactly what he said now, but that was the gist of it anyway.

When i test drove a 2000 M5 with 108k 2 owners and FMDSH a few years ago I could not get over the condition, nothing had any wear on it, it looked brand new, no scuffs on any plastics like you would expect, ok so an M5 is not really a car I could go with now but I'm seriously considering an e39 touring of some description.
