Still don't see why opera, chrome and firefox are so popular.......

I think the way it renders text/sites is awful. Opera makes websites look a mess all round, colours are off with it too.

The syncing bookmarks etc. is good though and firefox does have the better addons.

EDIT:

I recommend dolphin or boat since you're on GB.

Are 'mini' browser basicly light versions?

Sort of, instead of the device doing the processing, the data gets sent to servers to do the work, then the data will get sent to your phone, which can save up a lot of data usage and in turn allows it to load faster on your device. However, things like flash aren't supported due to the way it works.

Chrome isn't on Gingerbread :<
Alternatives

Dolphin I found to be best for GB (I'm stuck on it too :(), every other browser felt sluggish.
 
What app do you guys recommend for recording meeting times etc?

My tablets been gather dust and I'd like to use my phone and tablet together
for keeping track of tasks and meetings. I used agenda which syncs via Google,
but I'm hoping that there is a nicer alternative.

Surely you can't beat the calendar for meetings? Am I missing something?

For tasks I still believe Astrid is the best.

What's the best media player?

I like to watch movies from my wifi connection streamed from my HTPC.

Or even if I wanted to copy some across to the sd card - something which will play mkvs and most formats easily.
