Mine is Thyme. I like to get a bunch of it and shove it under the skin of a roasting chicken. Then when it's cooked, I take the bunch out and suck out the juices between the leaves... MMMMmmm. Thyme makes everything taste of the Mediterranean.

Rosemary would be the one I use the most, however I must admit I dont use herbs anywhere near as much as I should so im not the best of people to judge. More of a spice/seasoning guy.
 
More of a spice/seasoning person myself as well as I'll always chuck in a good lot of black pepper and often some chili flakes too. But I do chuck in herbs often and I'd have to say basil generally. But if doing a roast then definitely thyme. Thyme with roast potatoes, om nom nom!
 
im not a great fan of herbs, i dont mind a bit of rosemary cooked with my roast spuds but thats about where it stops.. cant stand linconshire type sausages with loads of herbs in
 
It's a toss up between thyme and coriander - I love them both equally. I do use more thyme though so, if I was forced to pick one, it'd be thyme.
 
Are you guy referring to coriander (plant) or the seeds? I assume the plant, which I equally love. Goes well with any spicy dish really.

Am I right in thinking coriander seeds are pretty zesty? Don't know what to use them in apart from some curries yet.
 
Ohhh it's a tie between Coriander and Parsley! Bit of Parsley with a fillet steak, Coriander with curry etc.
