Phad Thia

This meal is ideal for when you are in a rush, it literally takes 5 mins or 10 mins if you are using uncooked meat.

Ingredients

Chicken (2 breasts or a small stir fry pack) or prawns (not both)
Thia rice noodles (found by egg noodles, flat and translucent white)
6 tablespoons lemon juice
4 tablespoons fish sauce
1 tablespoon soya sauce
4 table spoons Brown sugar or palm sugar
3 tablespoons peanut butter or a handful of fresh crushed peanuts
3 teaspoons garlic
1-5 teaspoons of crushed chillies depending on your pallet
2 large eggs
3 spring onions cut thinly on the diagonal and separated
1 cup beansprouts.

Before i show you how its important that you have the ingredients ready and all measured out bit of a pain, but you can group them into a few small dishes. Also you need a good non stick pan on a high/very high heat. with a small amount of oil in it. As you'll see from the cooking times you need a good heavy pan to keep the heat.

Method
1) ignore what i just said about a hot pan, cook the chicken in small dice or cut king prawns in half. cook all the way through trying not to brown to much and remove from pan.
2) Whilst cooking the chicken or prawns, boil a complete kettle of water and place the rice noodles in a large bowl they are hard to snap(very springy) so check your bowl/pan is large enough. Read instructions but should take no longer than 4 mins to cook.
3) Put you pan/wok onto a high heat 2 tablespoons of oil, make sure it is very hot.
4) poor the water over the noodles and make sure all are covered.
5) back to the hot pan, pour the lightly beaten eggs in and wait 20secs till cooked, then stir to break up.
6) add the chilli, garlic and chicken to the pan, stir and cook for 15 seconds.
7) add the lemon juice, fish sauce, soya sauce, peanut butter, sugar, tomato puree and cook for 20 seconds.
8) chuck in the bean sprouts, as these are cooking for 20seconds, drain the noodles.
9) as soon as noodles are drained, remove pan /wok from heat and stir in the noodles so they are all coated should look pale red/pinkish from the sauce.
10) sprinkle over the spring onions and serve immediately. The liquid might sound over pouring, but there's no other sauce so it needs to coat all the noodles with out any remaining liquid.

from nothing to cooked in under 10 mins faster if meat/prawns are already cooked. As well as being fast its one of the nicest dishes.
