Fish question - Plaice.

Hey all,

On the right have side in this pic:

Is that skin or scales on the darker bit of filliet? Don't want to end up eating the scales!

nothing wrong with eating scales.. anyway i think its just skin..
how are you going to cook it? if you dont mind me asking :)
 
Pan fried with some oregano and oil I was thinking. Having a search for recipes at the moment but i'm open to suggestions. Just want something quick so I was looking at pan frying.
 
Nah thats just the skin and perfectly edible..well my mom seems to eat it and not suffer from an ill side effects.

Mind you tasty fish though:p, one of my faves.
 
That's skin.

Lightly dust it with flour and cracked black pepper, smoking hot pan, splash of oil, fry for 90 secs each side and serve with tartare sauce and lemon.
