I worked at a Potato factory once for a few days (IT project, not related to the actual potato business!), the potatoes went through the system, through the size graders, any bad ones pushed into a bin, etc...then were bagged into a few different supermarket brand bags. All off the same line.

I'd assume that most own brand products are similar.

Ots fairly obvious that a bag of potatoes is a bag of potatoes.

Anything that has a recipe will generally be unique to that supermarket but unique doesn’t mean it’s that different. For some products there is clearly a different between the different ranges and brands. The ingredients can be very similar but then end product can be very different due to the way it’s made.

The more expensive products tend to have better quality ingredients, more expensive mixes and other things like hand finishing etc.

Branded products like Kellogg’s, Heinz etc tend to make their own stuff.
 
So do you actually make different versions of a product for different supermarkets?

There must be variations in quality because some places charge far more than others.

Not necessarily. Variations in pricing can be due to packaging and marketing.

Random example...many years ago my mother worked for a company that supplied the building industry and saw some of the supply details for the trade. Including, for example, the same paint being put into tins for 5 different brands which sold at different prices. Exactly the same paint, made in the same place at the same time in the same way.
 
Yup - all new McDonalds builds are modular. you just pick the bits you want and it arrived flat packed. once the foundations are laid, the shell can be assembled in 7 days to a waterproof/windproof standard.
