At his village hall, Heston challenges the local hockey team to a blind stock tasting match before introducing his own super flavour-boosting stock - the secret of which is a sprinkling of milk powder to increase the levels of protein and sugar. Heston also reveals his guarded recipe for his dreamy chicken and ham pie, and demonstrates a shortcut for preparing a Michelin-star worthy chicken consomm?. For a final bit of theatre, Heston teaches viewers how they can use hot water, dry ice and essential lemon oils to flood our kitchens with chicken enhancing aromas.

Brothers Tom and Henry take viewers into the heat of the artisan kitchen and unlock the trade secrets of baking, taking viewers through their delicious recipes. This edition focuses on food that takes a long time to prepare. But don't let that put you off - the results are totally worth the wait. Tom and Henry make slow-cooked pulled pork served stuffed into homemade pitta bread, and Tom makes a sourdough loaf using the family's 56-year-old sourdough culture and tells viewers how to make their very own. There's also a traditional steamed pudding soaked in flaming booze and covered with a toffee sauce - a vintage classic. Henry's creeping into the lead in the weekly pie battle as the Pie Wars score board stands at 2 - 1. This week's judges are seven triathletes who are looking for a hearty pie to fuel them for their lengthy training. Tom and Henry make big, savoury pies for the endurance athletes to test run. But which brother will emerge victorious and which will flop?

And with the Pie Wars standing at 1-1, there's everything to bake for, as Tom and Henry make sweet pies in an attempt to woo five glamorous hairdressers and secure their votes. But which brother will be crowned winner?

The boys must complete their five-week mission in a three-tonne, 1980s electric milk float with a top speed of 17mph. To survive they must hunt for food for themselves and renewable electricity for their milk float. Get it right, and they could eat like kings as they travel through some of the most beautiful and bountiful places in Britain.

After showcasing his special techniques for the perfect poached egg and challenging how his local Holyport Women's Institute scramble, Heston then runs through how to make his signature scotch egg - crunchy on the outside with a runny yolk in the middle. If you have a sweet tooth, there's a master class in how to achieve a perfect lemon custard tart every time without fail - by using a thermometer. And finally, with a bit of Heston magic, the Women's Institute are invited to sample his famous bacon and egg ice cream made with dry ice.

Some useful stuff, but I wish he'd spent some more time on things like salting steak! I guess that could be an entire program though. Good demo about resting meat, was trying to explain this to my impatient parents at the weekend

Yeah, it felt like it should have been an hour long. But then again hes trying to SK Pliny it for the masses. Not sure why though. Most normal people aren't going to stand and flip a steak every 15secs let alone some of the other stuff.
 
Yeah the brothers where a bit odd.
The food though was very blokey, want to try some of that steak though, what was it called?
They seem to be catering for two very different types of viewers that don't go together.

They seem to be doing rather fast hungover/hunger fest recipes.
 
Onglet is usually called skirt steak over here. Bit odd they were referring to it as hanger. To be honest I wasn't a fan of either of them.

Nah, they are different. Appears hanger is diaphragm muscle connected to the plate and skirt is part of the plate.

Edit - maybe I'm wrong.

The Hanger Steak is one of the Flat Steaks and is a thick strip of meat from the underside of the beef cow. It hangs (hence the name) between the rib and the loin. It is part of the diaphragm and, like a skirt steak is full of flavor but can be tough if not prepared correctly

There are three beef steaks that stand out as being unique. While most great steaks come from the loin and the rib, these steaks come from other regions and are not cut from thick roast sections. These three great steaks are the Flank, the Skirt and the Hanger

Of these three steaks the Hanger Steak is probably the least known. In part this is because this steak finds its way into restaurants and butcher's barbecues more than it does the display case. You will probably have to ask for this steak. The hanger steak, also known as the butcher's steak or hanging tenderloin, is a thick, tough, portion of the diaphragm. Of these three steaks this is probably the least desirable. It doesn't tend to have the same flavor as the other two and can be just too tough for even the best marinade to deal with. However, Hanger Steaks have become increasingly popular in many restaurants, particularly French Bistros. This is due to the unique flavor. Prepared right, this is a great steak.

The Skirt Steak is probably the best of the three. The skirt has more fat and there for more flavor and grills up juicier. This steak is of course the original steak of Fajitas and because of that tends to disappear quickly as it gets bought up by restaurants. The skirt steak is however, worth the search. Find a good butcher and he’ll set you up. With skirt steaks you want to remove any traces of the membrane that surrounds it. Once cooked this will be too tough to get through.

Which means its different. We need a butcher on the forums.

I know, I can't work out the American brisket and can't find any discription of it.

It's think almost triangular with a good layer of fat on top. Depressing times. I need that cut.

Perhaps this should be turned into general food tv thread.
 
That's it, I want to do scotch eggs for starter, his ox tail pudding for main and that lemon tart for pud. God do those three dishes look amazing.

Whypt the **** isn't this an hour long and go into more detail. Normal people are not going to make his recipes grrr. I know why he's doing it like that but no, just no.

Still see what these gay brothers come up with, I actually liked the look of the dishes and pretty sure I've got some onglet steak on the way.

I really wish it hadn't been.

It's much easier to keep discussion about a certain show within said show's dedicated topic than to have a myriad of programs being discussed within one larger all-encompassing topic.

If people want to discuss How To Cook like Heston then a single dedicated thread is useful. Mixing that with discussion about other shows is just confusing.

We've got our own food section now; let's make the most of it.

What does community think, separate threads or combined?

IMO, as you can tell, unlike other sun forums, it doesn't move fast enough to warrant separate threads.
