Google wallet has zero limit itself unless a retailer sets one up. I've paid £1400+ out in transaction on furniture in past with it.Not sure on the UK position but here and in Oz the transaction limits that apply to Google Pay are the same as your physical card, they're not at retailer discretion.

It states on the card machine that contactless is limited to £100. I don't think it matters whether it's card or card via apple pay.
Different stores will have different limits i'm sure, and different card machines.
