Because you can't change the chassis name mid-season as the car was homologated under that name. If they'd changed that then they'd be ineligible for the constructors' championship points with that car. So the team owner bit of the name has gone from Sahara to Racing Point, but the chassis name bit has to stay as Force India until they build a new car for next season and can register a name change in time.
Ah, makes sense

@JRS but they have lost the constructors points anyway.
Andi.

Yeah, but they can now accrue Constructors' points for the remainder of the season with this car. Otherwise, they'd either not be a constructor (so no points available) or have to homologate a new car (not happening in time to go racing this season).

I wonder if Mercedes are going to now use FI as a test team for their engines, forcing them to take new experimental components and taking the associated penalties, similar to how Honda are planning for TR before RB use their engines next year.
Not sure the rules allow that, don't engines have to be the same.
Andi.

It now looks like they are keeping this years prize money but the loss of 59 points will affect next years prize money.
Andi.

But it will make the 2019 entry fees lower. IIRC $500'000 and $5000 per point.
Won't offset the loss of many millions of prize money, but it'll help a little.
