what made you wait to do the pilsner over the cereza? they both come with proper lager yeast so id have thought it was the same procedure with both?

this homebrew also gets you pretty drunk, ive had 5 bottles ( last shift of a 9 day week finished) and i really feel gone, very mellow drunk too which is nice, hangovers are so much cleaner too!
 
Double batch of Brewferm Grand Cru barrelled up this evening. It ended up staying in the FV for 16 days. I usually leave it 10-14 days (I say usually, I've only done 3 previous brews). It had to stay in longer as just as I was about to syphon it to the barrel a few days back, I noticed the barrel tap sealing washer had perished/cracked badly. :mad:

However, it's doing its thing in the barrel now, so hopefully it'll come out well in a few months time.
 
My cerveza has been in the FV for 19 days, i rushed the last brew so took especially long on this one, made sure to have a good diacetyl rest too, flavors seem clean and crisp so im bottling as soon as i get another vessel for priming, hope everything shapes up wih yours, surprised it perished so fast, how long have you had it?

on another note, after several (10) pints of homebrew which was very tasty i might add i hit ebay on the prowl for a mash bag that i found in no time. soon i managed to stumble across a fancy bottle opener i have seen in a few youtube vid's called the BBbarfly, £23 later i now own

i was seduced by the plethora of tricks you can do with them, very cool! i am a little wincy i spent £23 on a bottle opener but hey ho :D

Tried my cerveza after 3 and half weeks and yes 1 carb drop doesn't seem anything like enough. Barely a bubble :(

I won't waste it but it's a shame. What mix did you use for your cerveza in the end kanifee? I will knock up another batch a bit different this time.
 
My cerveza was mixed with one kilo of light DME and mixed to 19 litres to give an est ABV of 5.7% I then pitched saflager s-23 yeast.

I pitched at 18c then brought to 12~13c for 2.5 weeks, I then gave it a diacetyl rest for 5 days at about 18 to 20c.

To prime I batch primed with 140 grams of sugar boiled in 300ml of water, works out at 4grams per 500ml bottle, whether that's enough or not remains to be seen, I didn't have a second fv so had to use a large syringe and measure out 12ml per bottle. I'm keeping a close eye on the bottles to be safe.

You do have the option of re-priming each bottle, bringing back to room temp and reconditioning as the yeast is still pleasant, how does it taste beside low carbination mate?

Flavour of the Cerveza was ok but I have a poor after taste after being bottled for nearly 4 weeks. It smells better than it tastes. Not a complete write off, I will drink it but will make some changes for a next batch I think. It is after all my first brew and I did a few things wrong I would do differently.
 
The yeast give off bi-product when they consume the fermentables in the wort, one of the bi-products is diacetyl. A diacetyl rest is just a period of time in the FV after fermentation is complete where the temp is slightly raised to help the yeast clean up after them selfs, the raised temp isn't need I think with ales as they are fermented at a higher temp any way.

Diacetyl is said to give the beer a butterscotch/butter popcorn flavor and slick oily mouthful and also an apple taste, I didn't experience the butter taste but I did have a oily texture to the beer and a distinct apple tang, I rushed my first brew out of the FV and so it was very prominent, my second wasn't as bad but was much more oily on the mouth and the 5 day rest completely resolved this. The raised temp is fine as fermentation is complete and from what I have read off flavors occur at the start or early fermentation.
 
Samson Somerset Cider kit turned up yesterday. Needs 1.5kg of sugar so had go get some more. Hopefully I should fire that one off on Monday.

The Black Rock is drinking well, halfway through at the moment. I'm leaving the remaining bottles of Turbo (about 5 of each) for a while in the hope that a couple of months in the bottle improves them.

I'm after something 'interesting' yet simple after that. Any ideas welcome? The kit mentioned previously that was like Leffe sounded interesting, but was expensive as it only made 9 pints.

Which kit? I imagine it will be 9 litres, not pints. That equates to about 18 pints. Which is usually more than enough of Belgian strength beer :p

Ordered a Coopers Pils kit today to do at 12-13 degrees and another Cerveza to try with 1kg dextrose this time :)

Used Brewsmarter this time and looks like it will be delivered in less than 48 hours.

That's it for me then for quite a while :D
