Airflow and ventilation is your friend, we as humans give off a HUGE amount of moisture.
A vapour barrier and then celotex sheet insulation will probably be the way to go, as thick as you possibly can without losing too much living space.
When properly insulated it should help it stay cool in the summer and warm in the winter.
