What's multitasking on it like? How's the IM client?
Well you would expect since its inception that the 2 firmware upgrades before the UK model is released that these 'essential' and expected features would have been included or at least commented on...The UI counts for a lot sure, but even a fluid UI doesn't change the fact that there are some serious useability issues with the iPhone. No MMS, not being able to send SMS to more than 1 person, limited audio-only bluetooth support, no 3rd party app support, etc. Some of this can be fixed by firmware updates, some can't.
Bearing in mind this is Apples first forray into mobile phones I definitely think it's prudent to wait for v2 of the iPhone. Of course nothing about it will stop a certain percentage of people from buying it without hesitation purely on the strength of the Apple logo.
The multitasking is superb. Playing tunes and surfing the web while email is pushed to me through my Yahoo IMAP account is brilliant but it should be with a 700MHz processor and 512MB of RAM!.
How easy is it to switch between apps? Do you have to return to the home screen to switch between them?
Does anyone know if they have got Exchange email working on it yet. I want one as my work phone, and if it doesnt support this feature its pretty much useless to me.
Working, as in actually on there as an option, or working as in its on there but broken?

Great stuff, have you tried using it, just when I googled it, all it came up with was how Apple were going to liscense ActiveSync so people could use exchange. to access exchange emails without activesync you need to have IMAP on the server, I dont know if my works does, is this standard functionalty

Vista 64 bit... what's the situation with this and the iphone right now? Are they playing ball?
If it works anything like Apple Mail or even Microsoft Entourage for Mac then it will use Outlook Web Access (OWA) as opposed to the actual Exchange protocol (hence the need for IMAP access). In other words - it will be pretty crappy.
