Had a bit more of a fiddle with the playback, and the loss of iTunes DJ isn't as bad as it first seemed (unless you like all your iPhone friends to automatically request songs to your computer when DJ'ing for a house party, that functionality appears to be long gone).
Pressing play when shuffle is enabled will begin playing a random song, and will then create a list of 20 upcoming songs automatically.
You can add songs to play next (same as you can in Spotify and the old iTunes DJ), where it will play them, and then go back to the previous list of songs. You can also remove individual songs from this list, and iTunes will automatically append a new random song to the end of the list in its place.
If you press 'clear' it will wipe out all upcoming songs and playback will stop after the currently playing song, however.
