Kitchen stripped back to brick - Lighting advice etc

Just a quick update on this planning is going well, have decided on a Kitchen Plinth Heater

Currently looking at under cabinet lighting Want the triangle (wedge) shape but want LED, looking at these:

Kitchen is 4.3 x 2.7 not sure how many spots I would need, my intention is to put on a 3/4 way switch so say half spots, full spots and down lighters, also thinking spots to be bright white and down lighters warm white, down lights, plinth lights more for effect and late at night

any views or opinions plz
