For me it's always been fork in right hand and knife in left-hand despite being quite strongly right-handed, I know it's supposed to be wrong (and when doing place settings I would always set it out the other way) but it feels more comfortable for me so stuff tradition.

Then you are a good deal less left handed than you think. I assume you base (as most people do) whether you are left or right handed on which hand you write with? Out of interest:
Interlock the fingers of both hands. Whichever thumb is on top is dominant.
Fold your arms. Whichever forearm is on top is dominant.
Most people will do at least one of those the opposite way to what they consider themselves to be.
