Yep 169 feels a good compromise and 399 is a joke. Do it you know you want to . They are really good. However a lot of people here dislike them as you have seen.

I think it's like anything - Yes Whetsones/leather strops etc are peak and ideal - I have them, used them before but they take time/practise and you need to be careful to get them just right.

I'm looking for something simple to use - 5 minutes maybe every few months and be done with it.

Ditto. That’s exactly what it does and why I didn’t peruse the other route, I don’t have time to learn another hobby. The Horl is fast.

I have the Horl2 which has the diamond/ceramic. I hear the Horl3 is a little faster, but I can't comment on the £169 combo i'm afraid.

Personally I use a WorkSharp clone (Lihuachen currently priced at £85), there are other cheaper versions but this one works as well as the original. I can quickly get a very good edge on a blade - not perfect perhaps but functional, and that's what I need most of the time. Especially when someone takes my best knives and cuts sandwiches on a ceramic plate with them :-( They just won't listen. I'm also in the process of making a slow-speed diamond lap machine I'm just waiting for the variable speed motor to arrive. That's mainly for lathe tooling but together with the jig I'll be making it will surely perform well on knife blades. Obviously that won't be in the kitchen :-) The 6" diameter diamond plates I have range from 180 to 2000 grit and attach magnetically to the platten for quick change, even higher grits can be had for polishing.

Interested to hear about it... pricey!

I've no doubt it will get them sharp, but there's sharp, and there's hand sharpened by a wisened old japanese man, sharp, lol

For the money I'd hope it would be toward the latter end of the scale!

If your knives are tatty and need an edge putting back on I would buy the rough diamond otherwise you will quickly burn through the standard supplied diamond disk depending on how many you have.
Horl were very gracious in gifting us a new diamond when I used ours like an idiot. You have been warned. Once you have an edge on all your knives 15 or 20° I think you will be happy as am I.
I sharpen my main softer daily about once a week and once a month for the German steel ones. I don't have very high carbon steel knives so can't comment on that. 12 months in with mine and happy tbh.
I've never had an edge as good or consistent as Horl or been able to sharpen any of my German knives properly either without a lot of fuss. Will it sharpen like a scalpel with the stock attachments, No.

I'm still waiting for my nail to grow out after not tucking my fingers in properly, that sharp anyway!

Done need a Japanese old man, or even expensive gear

DMT aligner 3 stone kit for £56 in the rainforest

Go through all 3 stones with patience and let the stones do the work instead of pressing hard, make sure to sharpen both sides about equally

Do a couple of strops on an old leather belt or similar

If you done it right then watch your hands because it will cut to your bones easily

Brought a cheap boning knife so good,

Starrett Professional Stainless Steel Kitchen Boning Knife - Narrow​


Probably will upgrade it at some point, but was in a bind and didn't have a good boning knife does the trick for only 6.50 it's pretty amazing.
 
Every time I use my wusthof classic ikons I am reminded how well made they are. I have the 16cm and 20cm chef's knives and - carving and bread knife aside - barely need anything else. They hold an edge so well and always feel perfect in the hand. Would recommend to anyone.
