Just take your time when you are soldering them, although the pads are nice and large you do have some simple circuitry quite close and the last thing you want is to short something and not realise until you power it all up, it could take out a motor, your battery or more aside.
Get something to hold the esc still while you work on it and be mindful, the pads will have a fair amount of solder on so will take some heat to get things going but the whole esc will hold the heat and so if your re application of the wire and heat are not smooth and fluid then other components can become reflowed and move if touched due to it.
Maybe look for some YouTube video on rewiring a esc, I would be surprised if none are available.
