An i5 will be plenty :)

i7's are good for heavily threaded work such as video editing

That's an SSD yeah - like an HDD but not mechanical (no moving parts), they are much faster and will help with boot times and make the PC feel very fast :)

The i5 will be fine.
And yup, it's a normal SSD.

I'm only including 2 monitors purely because you said he'll be doing a lot of word/internet browsing

I just asked him there, and he said this:
"I just want the one monitor for now, but I want the ability to put another one in down the line"
So basically he only wants one monitor for the moment, but the build has to be able to fit another monitor in

Do you know if that'll be quiet? He said he'd prefer if it was.
Also is a GFX not required?
 
Should be reasonable quiet yeah, no noisy graphics cards!

You don't need a graphics card for this. The i5 has been in graphics core, which will run a PC fine for this use. and the motherboard has HDMI, DVI and VGA for monitors (can only run 2 at once)
