'Radio' is basically the software that runs the radio function of the phone, ie how the phone connects to the network. There's usually no reason to flash the radio unless an update has been released that gives significantly better reception or something.
The Kernel is the central part of the OS. Flashing different kernels on Android can bring overclocking support, power saving or other features. Most modded ROMs include modded kernels already of some flavour.
Cyanogen is the best Nexus ROM in terms of speed and stability but I've been running a custom kitchen MoDaCo Desire ROM for the past couple of weeks and it runs pretty well. Sense UI looks proper nice.
