Any suggestions for some slow cooked veg to go with slow cooked lamb shoulder? Might as well cook everything a the same time rather than doing veg in the oven!

Whole onions with a bit of oil on them.. Whole bulbs of garlic with the heads chopped off, wrapped in tin foil with some olive oil (roasted garlic is amazing and nowhere near as strong tasting as regular garlic). Most root vegetables work well slow-cooked but unless you want them to be either dried out or complete mush I would only add them about 1 - 1.5 hours from the end of the lamb cooking.
 
Sounds good, onions peeled I assume? How about spuds in foil? I assume they could take 2-3hrs?

Yup. Peeled most definitely :)

Potatoes in foil is a good one. I'm not a huge fan of jacket potatoes so they never occur to me as something to cook. I still probably wouldn't do them longer than an hour personally.

You could try something like this for the potatoes perhaps?

So, was going to test out my new Weber today, along with my new chimney starter.

Turned out to be a bit of a damp squid as the chimney starter failed to work. I'm guessing I didn't use enough newspaper to get it started (and ended up running out).

How much do you guys use? Tried twice, both times the paper had burnt out before the charcoal took. Other question is, how tightly packed?

I tend to scrunch up the newspaper fairly well and then stick literally as much under the chimney as will fit. It also depends on the type of coal you use. Charcoal briquettes will take longer to light than lumpwood (trade off is that they're usually longer-lasting). More expensive coal is harder to light so you're often better off using some cheap lumpwood to light it (light the lumpwood in your chimney, add the lit lumpwood to your unlit charcoal in the BBQ).

I've only ever got it to work with newspaper when lighting smallish lump wood, it doesn't light in seconds at all. Heat beads and briquettes have never taken when just using newspaper. I use firelighters to get it going, full chimney is ready in 20 ish minutes.

I did potato bombs at the weekend, I really liked them but the misses thought the cheddar and pepperoni I used was too strong!
 
Are you cooking with heating coal?

Lumpwood lights in seconds with a charcoal chimney

No idea what you mean by "heating coal"? :confused: Lumpwood lights quicker than regular coal but definitely not "seconds". I would give it at least 10 minutes (more like 15) to get as much of the lumpwood lit as possible. The bottom layer will of course light super quickly but you're doing it wrong if that's all you light in your chimney.

Firelighters are good yeah..though really for anything but the most long-burning coal you'll be fine with lots of scrunched up paper. It should get the bottom coals lit, which will then light the rest of the coals in ~20 minutes (as already posted above).

Awesome :) I've never actually made them but they do look pretty damn tasty. There's no such thing as too strong a combination of cheddar and pepperoni ;)
 
Used firefighters tonight and that did the trick. Took 20 minutes before the chimney was ready. Pleased with my new purchases :)

Edit: lol... I meant firelighters :p
