I tried something similar to the snake method myself over the weekend but it didn't work for me. I think my BBQ is just pap though rather than the method being bad.

Mine's a 57cm B&Q Blooma thing. It's actually quite good but the holes in the bottom part don't line up properly and there aren't enough of them. I was having to prop the lid open a crack to get the temperature up a bit. Think I'll need to get the drill out and drill a few holes so I can regulate it with the top vent. Apart from that it's quite a good kettle.

I tried to do some ribs this weekend (not a rack, large cuts of pork ribs, I really can't say what they're called as I am not sure, but we used to have them loads in SA and I loved them!) but failed as they were rancid when I got them out of the pack. I bought them from a farm shop on Sunday, their expiration date was yesterday so they should have been fine. I was absolutely gutted as I had made an awesome rub to go with them as well. Ended up having M&S Posh Sausages with their brioche hot dog buns, and rump steak teriyaki kebabs. The farm shop are going to replace the ribs, but it doesn't change that I was looking forward to them most of all!

Yeah..I enjoy whining :D I'm off this weekend to cycle London > Paris but once I'm back I will be making a decision and getting a new BBQ. Part of me is tempted to build a UDS...

Sucks /re the ribs. We generally just call them spare ribs here to be honest (I think), though I know outside of the UK that usually refers to the racks rather than individual ribs.

Haha I wouldn't say you're whining :) I am wanting to see what decision you make as I've seen you've been toying with a few ideas. A UDS sounds awesome but the Frontier would serve you well too :)

As for the ribs, yeah it was a bit disappointing but nevermind. The ribs themselves weren't on the bone which is why I don't know what to call them. It's almost like they're cut from close to the belly, they have a very similar look to pork belly. Actually, having a look now and they seem to be pork belly ribs :)

The farm shop owner was very apologetic and he even offered to drive over to my house with a new pack. By the time that would've happened we'd have been ready to cook and the rub wouldn't have had any time to settle into the meat so I told him I'd be back within the next few weeks so he'll sort it for me then :)

I think I just need to weigh up the convenience of buying a Frontier versus the cost savings of a UDS. I suspect convenience will win the fight though :p

It almost always does in this day :) Besides, you could be smoking right after you've cycled from London to Paris :)

To be honest now I've started eyeing up pellet smokers... It would be a considerable investment though. :)

Not that brand specifically but I've used beech wood for smoking before and it turned out pretty nice. Apple, cherry and mesquite are still my favourites so far though.
 
I'm planning on smoking a chicken this weekend. Anyone got any suggestions on what wood I should use? Chicken is obviously a fairly delicate meat so I don't want something too overpowering like mesquite. I've read that apple can darken the skin. Anyone got any good wood chip suggestions?

Is darkening the skin such a bad thing? I've not really noticed any "bad" darkening with apple or cherry and chicken.

Whatever you use I'd be tempted to just do a very light smoke at the start of the cooking and then leave it to the charcoal. Also, ballotine the chicken for the win ;)
 
Gahd..I really fancy some pulled pork or brisket. By the time I get home there's no way I can cook one in time :/

I've actually done something similar previously - sousvide pork shoulders and briskets and then just finish them off on the BBQ. Works surprisingly well :)

Ouch. Good to get lots of BBQing in of course but sounds painful :)
 
This time of year I wish I had a decent sized garden. Can't have any barbecues here now.

You don't need a big garden, just enough space for a BBQ.



Omg I'm in heaven, so so tasty. Had it with stir fry with chilli sauce.
That is such a good method, work even better with briquettes or decent lumpwood.








Would have preferred it with corn bread and BBQ beans, but watching coals, so massive pile of meat and little else.

Looks good. How long did you have it on there and what was the final temp? It looks a little more 'together' than it often is when you go for the typical pulled pork kind of finish... which isn't a bad thing :)
