Peri Peri? You could take out the vast majority of the chillies or substitute for heatless chillies if you liked. It would still be extremely tasty.

I actually nicked that recipe when you posted it the other day :) 14 chillies man! Which chillies do you normally use?

I'm gonna have a practice run this weekend, probably going to smoke a pork shoulder and I'll do a whole chicken as well, so perhaps I'll make this marinade and smother the chicken in it and then put that in the bottom grid in the smoker whilst the pork should happily cooks away at the top :)
 
I really like it and don't make it often enough to be honest. I'll have to rectify that this week, assuming the weather is decent enough for a BBQ.

Chillies-wise it varies quite a bit. Sometimes it's just 14 Sainsburys red chillies (which vary from having a nice heat to having virtually none). Other times we'll stick in scotch bonnets, nagas, etc to ramp up the heat levels. I think my favourite mix was probably mostly scotch bonnets as I do like their fruitiness.

The amount that makes is quite a lot btw - enough to coat several chickens easily and still have some left for table sauce :)

edit: Smoking a whole pork shoulder sounds like a good idea too. Maybe I'll do that on Sunday...
 
I can't do anything with chilli in it because it has to be child-friendly, so does anyone here have any suggestions?
Garlic, sage, onion powder, oregano, paprika, ginger, or a combination of that usually works. Paint oil under the skin and stuff the stuff in there, though, not in the beer can.

Personally, I don't think you can ever go wrong with a simple braai salt... unless you put WAAAAAAY too much on, of course! :D

As a simple no hassle way to flavour chicken, Tesco have quite a lot of pastes in the spice aisle. I found a Chipotle paste that was pretty tasty, they have loads of them covering most styles.
 
I said beer can chicken but I'll really be using my new poultry roaster grid that I bought for the Weber Gourmet BBQ system in my new MasterTouch :)

As a simple no hassle way to flavour chicken, Tesco have quite a lot of pastes in the spice aisle. I found a Chipotle paste that was pretty tasty, they have loads of them covering most styles.

I'm not normally a fan of store-bought pastes but the chipotle one from Tesco/Sainsburys is absolutely amazing.

Good to know, I might give them a try. I was in M&S tonight and their BBQ selection is astounding. I don't mean the meats, I mean the sauces. Such a huge selection, they've obviously pushed the boat for the summer :)

Ah, sounds interesting too. I need to check out the big M&S in town to pick up some euros so I'll probably have a look around the tasty food section on my way out :)

At the mo I'm stuck with a reasonably big kettle bbq which using the 2 zone method works okay... but whenever I get to use/see my friend's ProQ Excel I'm reminded of why I need to upgrade :p

I love the Excel, it's an awesome piece of kit. Such a shame that I haven't been able to use it much but this summer I'll hopefully change that :)

Awesome :) So you're almost good to go. The OneTouch cleaning system is one thing that I always wished I had on my old Weber Bar-B-Kettle. It makes cleaning very simple. The little ash catcher on the bottom is very simple to remove and empty in the bin. I used to have to scrape out my old Bar-B-Kettle. I am looking forward to a much cleaner base now :)

Also, you should definitely get some better charcoal. I recently purchased a bulk order for around £40 from a site called Creative Garden Ideas. Delivery was free when I spent over £30 and it made each kilogram of charcoal under a £1. Delivery was quick as well, it got here two days later and the SupaGrill charcoal is meant to be very good. I haven't cooked on it yet but I've read a lot of comments saying it's good stuff. I got myself two 5kg bags of lumpwood, 2 5kg bags of briquettes, an 11kg bag of the restaurant grade lumpwood, and the 12kg bag of super briquettes.

Lumpwood burns hotter but it tends to be shorter rather than longer and in addition it is harder to regulate due to it not being as uniform as charcoal.

Some people incorrectly believe that using charcoal can add an off flavour to food and/or that it's better to use lumpwood as you'll get more of the wood smoke flavours from it. It's almost always better to use decent charcoal and then use actual wood chunks to generate the smoke for your food.

I start off with the charcoal in the bottom of the chimney starter and add the lumpwood to the top and then when it's ready I empty it out and grill on that. It helps if the lumpwood chunks are large. Smaller chunks are absolutely useless!

That's an interesting approach - I have been thinking recently that it would be worthwhile to use lumpwood on the bottom (or lumpwood entirely) of the chimney and then to empty out the quickly-lighting lumpwood on to the unlit charcoal in the grill/smoker (I tend to use the minion method for smoking where possible). I guess having lumpwood at the top of the chimney means that everything in it lights a little more evenly?
