Not sure if this will help you with that but this is an interesting link mixing grilling and sous vide jerk chicken.
I made these last week and they were pretty damm good, they taste very meaty and the better half loved them; I did leave out the cashews but will try it with them in them next time and probably ramp up the spice level a bit.
Do you mean pepper as in peppers or pepper the spice?
