"Pancake Tuesday" - How do you make yours?

Savoury pancake parcels for dinner. Chicken, onions, mushrooms in a sherry and cream sauce. Wrapped in a pancake, then baked in the oven for a bit with some cheese! :D

Mastered it!

Pancake 1 was a disaster, 2 was OK, 3 went in the bin. 4 & 5 have been perfect. Oh yeah.

I've given up. pan kept sticking in the middle so couldnt flip them over without them tearing apart and then regelling into a lump. Even tried using half the pan but that didn't work. Got fed up eating have cooked crepe lumps.
Also my wrist/hand has decided it doesn't want to hold anything =[
 
Need to keep them on the heat for a lot longer Ash. Wait until they start bubbling up on their own accord before slipping a fish slice under to loosen them up.
 
Butter! No oil :D It's my favourite pan - a pancake pan! Like, a pan, DEDICATED for pancakes!!!!! :eek: :D :D

Yeah the pic makes it looks crispier than it was - don't worry they weren't crispy! Just nommy!
 
Could someone get some nice recipes up please? :p

Also, what's the difference between Scotch/American pancakes? They both look the same but the American one is usually industrial size.
 
American ones usually are more airy/lighter/fluffier. They separate the whites from the eggs and whisk them separatly. I will go grab the recipe
 
Pancake recipe?

110g of plain flour. Sifted into a large bowl.
Large pinch of salt thrown in.
2 eggs - cracked into a well in the flour.
200ml milk mixed with 75ml of water - Pour this slowly into the bowl whilst whisking.
Good sized knob of melted butter.

Then butter a frying pan and ladle the pancake mix in. Few minutes on one side, flip (tossing is the only way to do it) and then 30 seconds or so on the other. Slide onto a plate and nom.

Scotch pancakes are quite small, and got a bit of chew to them. Crepe style are my favourite though.

Oh and forgot to mention I ate mine with crunchy peanut butter :)

They looked lush, Jester - put a recipe up :) I might try doing some at the weekend. Will have to get a pan for induction hob, though - since moving, I've had to ditch most of my pans :( we had to use a high-sided chef's pan last night! Nil flippage was had.

Had to be lemon + sugar on the first one, for old times' sake, my other one had black treacle on it, as we had no maple syrup.
