Thats becuase Console games dont have the choice. If you want, you can just play the PC game as well. And it'll still look better than the console one.
However, you also have the CHOICE to tweak it and improve it still further.
PC games were very guilty of being tech demos back in the late 90s.
I found myself trapped in the upgrade path and always trying to make things look better, I think quite a lot of people who remember the Quake - Quake 2 days and Unreal will admit to this, it was almost about 50% of the hobby, I think without the tinkering, PC gaming or maybe video gaming as a whole would be very different.
PC gaming took off with sound cards and at first just basic colour cards being produced for business machines to run perhaps more mature versions of what was happening on the consoles and arcades, and then taking over from the Amiga, which was designed by the same guy who did the Atari VCS and 8 bit computers.
Interestingly John Carmack started coding games to get a game like Mario Bros running on a PC, and many of the other well known games designers will usually name a console game as being the best designed in their field.
People should look back at the history of the chipsets. Consoles have always been just cut down home computers designed with pricepoint as number one concern. Then again IIRC some home computers grew from console design, I think the Apple was designed by Atari employees?
And who remembers the programing cartridge and keypad for the Atari VCS before anyone says consoles are trying to be like PCs

The PC with its roots designed for business apps ended up taking over most of where the old home computers used to be, it was never the ideal platform for games but things moved so fast the upgradabilty was the winner, and the consoles have moved over what ground was left bringing them quite close.
It's all very interesting stuff spoilt by snobbery IMO.
I dont know about anyone else, but realistic graphics and pin sharp resolutions really dont do it for me anymore, so Im looking forward to playing Mario Galaxy for the artwork and game design and the unrealism of it all. Having said that, Im not sure if I can stomach Mario anymore as a character, I kind of wish Nintendo could apply a game like Galaxy to a fresh, very slightly maturer bunch of characters. Ive got a 5 year old who prefers Mechwarrior games to Mario
Although we also have to appreciate the games coming from Nintendo are coming from a different culture who seem to cope with these cute characters better.
