If RAM is at 2666, you are not using BIOS default settings. Enter the BIOS and reset everything to default. It varies depending on which board you are using, but its often a case of entering BIOS and pressing F7 and then F10 to save and exit.Reset to optimised default settings. The only thing it changed was a 4g decoding setting.
Ram is at 2666, will try and get it to 2133mhz.

Really wanted to keep it but the constant crashing and worrying about temps for the summer is playing heavy on my mind.

This is what I did and the 4080 has been more stable well actually no crashes! You can see how cool and efficient my FE model has been from my posts in the owners thread. Better then my previous 3080.
4080 is in. Absolutely 0 crashing, even with my XMP profile back on.
Happy it's resolved but did really want to go AMD this time.
CPU temps have dropped with the 4080 as well? Probably because it's not blasting out 100c
