If they have a knife or gun pointed at you then killing can be perfectly reasonable in some cases. Without a knife or gun then probably breaking something to get them down would be acceptable in some cases.
If you get them on the floor then repeatedly stamp on their head because they punched you... Then that will probably get you dragged into prison...
You can use reasonable force to defend yourself. "A defendant is entitled to use reasonable force to protect himself, others for whom he is responsible and his property. It must be reasonable."
The defination of reasonable force depends on the situation. I think the key point is you must escape/avoid when possible. Even if someone attacks you in a completely unprovoked fashion, you can do whatever is required to make an escape. If you knock someone to the floor and have the clear chance to escape and instead you choose stamp the life out of them expect to go to prison.
As far as I'm concerned, you can keep beating on the person in self defense until they are no longer able/willing to fight you, at which point it would hardly be self defense. As for the legal issue, I have no clue what is and isn't allowed, all I know is that I would fight until the other person isn't trying to do me harm.
