Just a simple pair of treacle tarts. Nom!

Sous-vide burgers for me today. Cooked for about two hours at 55C. I'd probably drop it to 54C next time.

I had to cheat with loads of ingredients as I didn't have stuff in. I need to learn to make good brioche burger buns too :p

Burgers out of the sous-vide bags and ready to brown with a blow torch.

The finished article. Way too much burger :p I always think the patties are smaller than they actually are and then end up not being able to eat it properly...

Texture was great, needed more salt though. This was really an experiment to see if I could make burgers that didn't have a terrible texture (and I can, woo). Next time I will be getting some decent mince made up for me by the butcher.

They look nice and juicy. Did you get enough flavor on the outside with the blowtorch?

I had a lovely burger on Saturday, best I've cooked so far.

M&S Posh brioche burger bun top
romaine lettuce
thin sliced tomato
thin sliced gherkin
thin sliced red onion
Waitrose air dried and cherry wood smoked streaky bacon (one slice in two halves)
M&S processed mature chedder slice
Gog magog beef and marrow burger (BBQd with hickory)
M&S processed mature chedder slice
Heinz TK + Colmans English mustard

The char was pretty decent though I think it would have been better in a cast iron pan - then the burger may have ended up overdone though. It's a tough one :s

I like the sound of that M&S burger...

Also, cross-posted from the BBQ thread. 11.5 hour smoked brisket from Sunday:

Another home made pizza. Chorizo, home made bbq beans left over from the bbq and the usuals. I went a little overboard with toppings but it still turned out amazing :)

Close enough!

Finally remembered and went to that sandwich shop for you but sadly they've stopped that chorizo paste because it was too expensive to buy and wasn't economical to offer as a sandwich filling.

I wish I could cook as good as half the people in this thread :(

Here's my latest favourite salad/meal. Toasted walnut & feta salad with radish & courgette and a garlic & lemon drizzle.

Oops. I missed this reply sorry.

Thanks for checking up on the place. I think next week I'll finally have time to try and make my own spreadable chorizo. I'll post up pics/method and if you happen to be in the area when it's done in a few months I'll be happy to get you some to sample :)

Last night I made Creole fish stew. Was delicious except I overdid the chilli a bit and the heat detracted from the flavour a bit (my own fault - I quadrupled the amount of chilli the recipe said :o). Next time I make it, I'll cut back on the chilli.
