While I agree that the presentation isn't my cup of tea, I would never put a freshly cooked meal before mcdonalds... You can't talk about ethics and then bring up the big mac... lol....

and as i started my second sentence with "seriously though.." that kinda tells you i wasnt being serious with my first sentence ;)
 
A few of us were discussing that kind of thing the other night. Pretty much all of us turned out to be massive hypocrites - most of us would try to buy meat and eggs that had been raised in a more ethical way but then we would all also be guilty of sometimes just buying super cheap meat from questionable sources too. Something to improve on.

Protein brownies. A little more cakey than fudgey. I think I need to add an extra egg to counter act the fact I've added a bit of leavening agent within the whey protein, or lower the flour content a bit more. Eitherway, with the chocolate chunks in it, has managed to keep it relatively gooey. Still, means I have to make some more. Shame! Not too sweet either, I didn't put a huge amount of sugar.

Looks good. For more gooitude you could just try cooking it less? I kind of like my brownies only about 1/2 cooked :p

Yes I probably cooked it 5mins too much. But will definitely add an extra egg next time - adding the whey and peanut butter changed the consistency a little.

I can imagine. I've not used whey in cooking (though I like the idea of extra protein in things). I think I've just been put off by the times I've tried things like SiS "protein bars" and the like. I'm sure home cooked stuff is infinitely better but I guess I've just got that bad association that I need to get over.
 
The short ribs are from Tom Kerridges book (and you can find them online) - defo worth the three day prep! The lamb was "slow roast lamb with cinnamon" from BBC good food site. Pork details escape me right now!

The egg was orange and star anise Sorbet on a lychee one - tasted great! Best thing though was the super dried rhubarb

Next project is a Full English for pudding - currently going to be mandarin jelly on coriander seed panna cotta (egg), black olive tart (sausage), raspberry ice cream with nougat streaks (bacon) hazelnut brittle (toast). Still playing with ideas though. Next time I should snap progress shots too maybe

For cooking I used unflavoured whey, which has a mixture of egg, casein, and milk protein (isolate and concentrate), so it potentially could affect the baking/mixtures, but in general I find that it doesn't really impact the consistency or impact too much.

These brownies probably only have around 7g of protein per square, but it's pretty good for a snack, and since it uses raw cane sugar, and dark chocolate, and peanut butter (or walnuts) to macros are generally good, as there's very little flour in it. In fact next time I may not use any flour and just used ground almonds to really beef up the macros. :)
