I don't think he actually eats like that all the time, it looks like it's just put together that way for photographic purposes.

Homemade pizza with hams, figs, goats cheese, mushroom, onions and a little chedder. The base is tomato, garlic and aubergine.

Couple more work dishes; again, not mine, I just make them. At a different place now than last time. Apologies of the bad photographs!

Pigeon, Soubise, Foie Gras, Rye

^awful.

The sheer fact that people pay top dollar for that astounds me. It looks like the pigeons been hit at 100mph and then scraped on the plate.

The pigeons leg looks grotesque to me, the sauce and specks of salad look dumped on and the fioe gras is one of the most unethical foods in the world.

Dessert looks OK, but I would rather pay £5 for a Big Mac meal than that.

The whole ethos of the restaurant is about challenging people.

the sauce and specks of salad look dumped on

That's fair enough as it's your opinion, but so far your on your own with that. The mustard cress isn't tweezered onto the plate with microscopic precision because it isn't a 2 star restaurant. I'll try harder tomorrow night with the three courses I'm doing at once! ;)

fioe gras is one of the most unethical foods in the world.

Meh...

Care to qualify that with an explanation?

Your entitled to your opinion as much as I am to mine.

Hopefully, we can get someone else's views on this.

yeah im with rob on that one, Bigmac meal all the way :D
seriously though the lumpy custard looking splat doesnt do it for me, that needs refining imo, there must be a better way to present it

Well the soubise isn't really lumpy, it was left in a pot on the shelf above the stoves by someone all evening (:D) and dried up a bit! I put a butter wrapper over it tonight and it was perfect, although we ran out of hearts :(

The breast is cooked sous vide at 52° for 70 minutes, then sealed and basted with butter. The legs are confit, and the hearts pané in panko and deep fried. The mustard cress salad of course, as thrown at the plate with greasy fat fingers!

Where abouts in Aberdeen is that Illgresi?

KaHn

/edit :- Scratch that, you're at Moonfish, good restaurant.

While I agree that the presentation isn't my cup of tea, I would never put a freshly cooked meal before mcdonalds... You can't talk about ethics and then bring up the big mac... lol....

Looks lovely.

On the above, although the pictures are clearly terrible, the comparison of a big mac preference is a bit silly. But hey ho, takes all sorts. I think the photos let down the meal, I'm sure it takes nice.
