Yesterday I stuck some pork shoulder in the sous-vide at 60C. 30 hours later it came out, was cooled and then was sliced into nice thick steaks. Seared on both sides and served with chorizo-fried new potatoes, asparagus and roast vine tomatoes (which I forgot to stick on the plate). I also roasted an apple and reduced it down with the pork jus to go with. Pretty tasty :)

What's the bottom bit of that pic? Kind of looks like dried shrimp though I'm sure it's not :)

edit: Actually, I'm not sure :p
you were perfectly correct. :)
I love Vietnam, off there in Jan for 3rd time in 4 years, which area are you from? Im assuming North from the dishes

you mind dropping me the recipes for the 2 Bun dishes

I am from the South. Vung Tau City.
Bun Mam is actually a signature South-West cuisine. It looks nice but I don't think you would like the smell. https://www.youtube.com/watch?v=mAmoqOgRJyU
Bun Thang is indeed from the North. https://www.youtube.com/watch?v=jSG_Fn7Lz1M

I just watched the YT video that you linked to. The fermented fish paste really looks like surstromming. Have you smelt both? If it's as bad as that I don't think I would be allowed to cook with it :p

When I make the Bun Bo Hue I have to avoid smelling in until the herbs are added because of the shrimp paste :p

Bun Thang is not so bad, it smells less than the Bun Bo Hue.
But Bun Mam is in another level of smell, it literally smell like a dead body when you cook it. :D
The word "Mam" basically means "fermentation"
