I've been brewing via Chemex for the last two weeks and it really makes an outstanding cup!! So different to Aeropress- slightly 'lighter' in texture if that is the word and more aromatic, you can really identify the different flavours more easily in the Chemex.

I've noticed similar results with the V60 after using the Aeropress for the last couple of months. I'm going to get a Chemex soon. Which size did you go for in the end and which filters did you go for?
 
I got the 3-6 cup size one with the circle filters. The filters take up a lot of space so will go for the cone ones next I reckon.

Thanks. The 3-6 would be ideal for me as I don't often make a cup for more than 2 people. I see what you mean about those big filters after watching a demo video!! Do you find the chemex hard to clean as Flibster mentioned that keeping the wood/leather clean might be a problem?

One thing I have noticed with this bean is that if it is left in the french press for more than say 3-4 minutes my usual sort of brewing time it gets that instant harsh bitter taste of being over brewed.

Are there any reccommendations on how long it should be brewed for I am assuming that a more suitable time may be 2-3 minutes.

Again I guess this comes down to the trial and error aspect of looking for that perfect cup.

If it's going bitter, you can grind coarser or brew for a shorter time. Check out some of the suggestions on www.brewmethods.com

I find that french press is the hardest method for me to get consistently good results. Even harder than the syphon.

The problem I have is that taking the leather strap and then the wood bits off isn't hard, it's just annoying to do regularly. Thats why I like the glass handled one - no need to do it. Also slightly easier to pour with.

I'm hoping to be there on the Friday evening for the public opening, if not then it'll be the Saturday.

I think it's the same place that recently had the Queen exhibition on, so nearby you have some great coffee choices too.

Nude Espresso just across the road - excellent coffee (from their own roastery) and superb cakes.

Prufrock @ Present just down the road - excellent coffee from a lovely lever machine.

Taylor St. Baristas - Old Broad St is a fantastic place. I'm not hugely keen on the coffee, although some of the guest espressos they run are pretty fantastic. New St, is just a tiny little place.

Project Waterfall is a hugely worthwhile charity. Also quite a new one for me. Normally at coffee events I see Coffee Kids and the lovely Elisa. Always drop as much as I can in with them.

And while there is some pimping going on - someone twittered this link to me a couple of days ago when it was at around $1000 pledged - it's really taken off! Will be getting a set myself to try.

Nice. Reviews for the Mignon are limited but they all seem good. How easy do you find altering the grind coarseness?
A small dial on the top front left corner is used to adjust the grind, it's about the easiest thing to do on the machine! You can also adjust the timer for each grind (you can grind by pressing the portafilter against the switch or use a timed grind) which is a bit more awkward as it's on the bottom of the unit. Once you have the timer set though, you shouldn't need to adjust it again so it isn't really a problem.

My faithful recommendation of a Iberital MC2 isn't going to cut it for this kind of application unfortunately :(

Well my love affair with the Aeropress is officially over. Just made a cup using it and the difference in taste between it and the Chemex is astonishing.

Sure, it's not a bad cup of coffee; it's just that the Chemex makes a much better cup for my tastes
