Quite happy with medium or medium-rare at the minute. Used to always have it medium-well done, but have been cooking it for less and less duration each time and enjoy it. Had a Ribeye steak in Amsterdam that was cooked medium and it was perfect, the best I've had I reckon.
 
Well I'm not raising the cow myself, I don't know any farmers personally. So really I don't know what parasites the cow will have.

I don't want to catch parasites from uncooked beef, so I don't eat uncooked beef.

Ask your butcher where the beef, pork, lamb etc comes from, if they don't know or will not tell you then take your custom elsewhere.

Do you realise that the "Parasites" as you call them only live on the surface of the meat, hence searing the meat renders it safe to eat.
 
You do get parasites in the meat too, Beef is lower risk, Pork is higher risk but still I prefer not to take it.

The butcher telling me Farmer Bloggs provided the cow is neither here nor there I'm too removed from the animal welfare to judge for myself.

I also find meat cooked so the flesh is cooked and the juices are on the turn is the most enjoyable outcome flavourwise. I don't mind other people thinking different.
 
Medium or Medium-well done. Ordered a medium rare before thinking theres no difference between medium and medium rare...how wrong was I, didn't like it one bit,far too raw for my liking. :o
 
Well-done, it changes the flavour significantly. Plus, I'm civilised and I eat my food cooked, unlike the uncivilised barbarians who eat it still bloody.
 
Medium-Well -> Charcoal. I try and avoid charcoaling it but I can never get the grill pan just right :D I know you need to get it really hot at the start but then what heat do you leave it at? (using gas)
