Well I'm not raising the cow myself, I don't know any farmers personally. So really I don't know what parasites the cow will have.
I don't want to catch parasites from uncooked beef, so I don't eat uncooked beef.
100% depends on the cut.
If its a fillet from a source I know to be good, then blue.
Other cuts, anywhere from rare to medium-rare.
Medium rare. Needs a pink tinge.
