Rare in places like Harvester/pubs etc, wavering between blue and rare if I'm cooking it at home.

Are the folk who don't like rare meat the same people who don't like (or won't try) sushi?

No. I'll try anything, but sushi wasn't my cup of tea.
 
Bleu isn't the proper way, and 9 out of 10 the people i cooked bleu steak for were trying to show off in front of their mates/girlfriend and didnt finish it.

Yes it is. Bleu (sic) is the only way of having steak ;)

Actually I'm surprised that more people here in the UK don't like it cremated!

You need that flavour of cooked meat to complement the bloody flesh.

If it's a good cut of meat it should have lots of flavour, certainly if it has been cooked properly ;) Nothing like a really very hot griddle to get a nice texture and flavour on the outside of the piece of meet... oooh and when the fat gets nice and crunchy too - lovely! Right that's it, I'm popping by the butcher's tonight. :cool:

Skeeter - there's no blue on that pic, ergo it fails.
 
Medium, rare is just gross if i wanted rivers of blood id listen to Enoch Powell ;), and well done/cremated is too dry and most of the taste has disappeared :D

Btw - never send a steak back to the kitchen. When I work in the kitchen, any returned steaks where on the floor, stamped on and put back on the grill :p Was a few years ago though - things have changed :D
 
Not the best pics - blue is actually more like purple in the middle, and not hot - it should be around 35C and is basically seared very quickly, rare is quite warm at nearly 50C IIRC and cooked for around a minute depending on the thickness of the steak, anything more than that I don't know as I can't stomach it.

It's great fun going to France and asking for my steak bleu. They seem to expect English types to want their meat ruined.

Next time I go over, I'll be overnighting in Chartres. There's a great little restaurant there that I shall have steak tartare at. That'll confuse them....
 
Fairly well done for me if I must, under-cooked meat tastes rank imo!! But steak is over-ratted tbh, would much rather a really nice juicy grilled steak of the best blue-fin tuna!! Far tastier and miles better for you so win win imho.

I chose cremated, but its not strictly true. I like it cremated on the outside, but rare on the inside. The outside 2-3mm should be burnt to a cinder, but the inside should be nice and rare and juicy.
