medium rare if its going to be cheap steak like wetherspoons or somewhere but if its good steak and im doing it at home then rare

100% depends on the cut.

If its a fillet from a source I know to be good, then blue.

Other cuts, anywhere from rare to medium-rare.

Fillet and rump have less fatty content so cook those boys rare

Ribeye and Sirloin are fattier so medium at least to get the flavours out of it
