gg jimbeam. you need to be more unpredictable and use more different buttons for block strings. the reason why i was able to random dp so much is because i already knew what you were going to do and what button you use (ie. throw when jump whiff so i dp for free damage on you). also stop running away, and be aggressive. jumping away and back towards me is bad as i can reaction with an anti air easily. go for meatys and throws mixup when you have advantage and bait dp when you feels it. this game is all about pressure your opponent into a mistake (whether with mixups, fireballs, pokes), straight up running usually dont achieve anything. stay in a range where you can hit them with something and anti air comfortably. best range for ryu is about sweep range, so you can do walk up crouch mk, sweeps, or fireball right outside of sweep range and still have time to react with dp or crouch hp if they jump
dont do random sweeps unless you are sure they will hit. its very punishable (you probably know now after i hit you with combo into super a few times after blocked sweeps)
but your patient and anti air is decent so i couldnt just mindlessly jump. dont afraid to throw out random dps, but just dont over do it, because it can be punished with a crush counter combo (although i didnt do any in our games). also you need stronger combos for punishes, youtube them up.
for sim match up, if he just randomly teleport without a setup just mash jab, thats the easiest way to stop him. however if he knocks you down and do it, you will have to block accordingly, but change up your wake up timing so he cant set you up as easily. the slides are unsafe block and hit, so just dp after every slide.
