I was doing an unusual 4pm - 10pm shift today at work. I had originally planned to go to Glasgow tomorrow on my day off, but I decided instead to go today and then get the bus to my work afterwards.
Yet another weekend special at Scran. Really glad I went today because apparently it sold like mad today and there's none left for tomorrow. Was Southern fried Cajun spiced almond breaded chicken breast in a pretzel bun with caramelised shallots, peanut butter & bacon jam, avocado and chimicurri. It was really good! The chicken was fastastic!
Didn't want to have anything too heavy for lunch, in case it put me into food coma mode, which wouldn't have been ideal for going to work. Went to Patisserie Valerie and had the club sandwich and fries. Quite fond of this one, its a tasty treat
I made some Florentines. Delicious. I also did my first ever tempering for the chocolate. Not perfect, a few slight blemishes/bloom but pretty decent and doesn't melt in my hand. I used my infrared thermometer to monitor the melting, cooling and reheating temperatures but I'm waiting to receive an instant read thermapen type thermometer for better accuracy as the infrared is only really for surface temps.
Had some leftover chocolate, so coated a couple of macaroons as well.
Didn't end up going to Buck's Bar, but I did have a nice little day out in Glasgow since I had a holiday from work today. Had breakfast at Gnom. Been ages since I've had their breakfast bao buns. That pork belly with the gochujang ketchup is amazing
Had lunch at ThaiKhun. Had the grilled pork skewers to start with, served with jaew sauce. Followed by a Thai red curry with beef rump. The red curry is both creamy and spicy. Delicious!
Another day off. Don't usually go to Glasgow 2 days in a row, but since its Easter I thought why not.
The latest weekend special at Scran. Italian flavoured ground pork, sautéed potatoes, poached eggs & sugo sauce on sourdough. With potato scones. It was pretty good, though other specials have been better.
I wanted to try somewhere new for lunch, but wasn't really sure what I was in the mood for. So I basically just went for a walk to see what I could discover. Ended up finding an Italian place called Café Antipasti. Starter was gnocchi dumplings with pesto and parmesan cream. Delicious! For mains I had lobster ravioli which was also very good. Glad I found this place, would definitely go back
I had originally planned to go to Deesserts for a nice Easter sweet treat, like cookie dough, waffles or a big sundae. But after that breakfast and lunch my belly was telling me no. I did still want to have something though, so I opted for a couple of scoops of ice cream. Banana and cherry flavours. So creamy and delicious and fairly easy on the digestive system
Thanks Craig, it really is lovely with super moist lemony crumb, lemony icing and juicy blueberries.
I made a baking belt of water soaked kitchen roll wrapped inside foil to keep the edges soft and from going crusty. It really works!
Cooking time is about an hour, cooling time about 30 minutes or so. Prep time about 20 minutes. I used the Joy of baking recipe. Definitely worth watching the video as well.
Worth noting that I used her lemon glaze which shines the top but I also added my own icing glaze. If you want to add the icing glaze, it's about 125g of icing sugar mixed with 2 tablespoons of freshly squeezed lemon juice.
Chicken drumsticks, made with an awesome seasoning that I stole from the Original Naked Chef youtube recipe. Mix up 2 tablespoons flour, 1 teaspoon salt, quarter teaspoon of cayenne pepper, about a teaspoon or so of bottled chicken seasoning, and half a teaspoon each of black pepper, mild curry powder and paprika. Pour into a bag, throw chicken pieces into bag and shake it all up to coat. Preheat oven to 220c, line a glass or metal roasting tray with foil and melt about 35g of butter in it, then put chicken in and cook for about half an hour.
My neighbour came back from Poland and gave me some massive polish smoked sausages, I think they might be Kielbasa, which taste amazing cold or hot. Kind of salami'ish. I decided to saute/caramelise onion and tomatoes in oil and butter, some salt, pepper and Worcester sauce, then sauted the sausages for a few minutes. Made some mash too. Delicious.
