There is a similar type I bought from a Deal cheese shop a couple of years ago, that changes flavour as it matures.

It is a French cheese and every time we go back, he is not there and his wife is not sure of its name

Next time he is there, I'll get the name and pass it on

I like Co-Op’s Extra Mature Cheddar… It’s lovely (Basic of me I know) but not a fan of the Smooth/Creamy types of Cheddar.

Youngs Gastro lemon pepper fish, Sautéed baby pots, Leek & cabbage braised in butter with some Creme Fraiche stirred through which didn't really work that well and a homemade Tartar sauce.

Posh fish and chips.. ... like the idea of the leek and cabbage.. thought it was in a cheese based sauce.. looked well nice.. .. thanks for the info though!!
