Eating my lunch of homemade salad at work.
It contains:
Fusilli pasta,
3 mixed beans,
sweetcorn,
chilli,
peppers,
red onion,
tomato,
cucumber,
smoked mackerel,
Done a nice big vat so that's my lunches this week and cheap as chips!
Just had yesterday's leftover Bolognese, and after a night in the fridge it was bursting with flavour. I admittedly cheated with a Grossman tomato and chilli sauce for speed and convenience but I also added the following to the beef mince to make it truly awesome:
- Chopped chorizo
- Cherry vine tomatoes
- Mushroom
- Finely chopped garlic
- A whole chopped red chilli
- Black olives
- Basil
- Chunks of mozzerella at the last second
Cooked it slowly for a good long while so it was already pretty good to begin with. Could have done with a glug of red wine though... as could I.
