Pretty sure i have used mine in Turkey before by the way. Usually Turkcell you end up on.
I was at the time yes. Maybe its a Brexit thing because it was before that. Either way just get a local SIM when your over there.
I used an eSIM from Airalo, worked a treat, they also cover Turkey, eg 5GB is $12 for 30days. This is data only.
Don't see why that shouldn't work, for normal calls and text I still just use my normal 3 SIM abroad.can you use voip for voice - I use it and it's easy for outgoing calls, for incoming, tougher, guess you'd have to rent a number and forward regular calls.
eSIM, easy peasy.

I’m sure with Vodafone and EE they have an add on of around £5 per day.
That's what is stopping me from moving provider.
I deliberately renewed my contract with EE in June 2021 so I could keep the roaming being tied to my allowance (also got more data, 5G and lowered my monthly payment).... I'd imagine they will remove it as some point but, for now at least, I can use my phone abroad as if I was still in the UK.

Just remember to turn off auto data switching and set data to eSIM. Do that either on the plane or just after you landed. This is so just in case if the signal drops it goes to home sim which then will rack up a ton of data charges.
calls - so holafly seems to have 60minutes of calls now included to other european countries, on the local number they give you,

compared to roaming I guess people in uk couldn't call you cheaply, but you can make local&european/uk calls in those 60;
If you are visiting several countries not sure if the holafly transfers data/call rights
