Which is more rude?

Neither are particularly rude at all? It's all about how you do it, for example a real easy way is to put on your campest voice, relax your body and say "Ooooh, I couldn't possibly... if I get any more cream around my face this week, dyaknowwaddameeaann???!?" flap a bit and laugh hysterically.
 
Surely there's more to it than that?
Social interaction cant be that simple?

I'm not going to claim to be an expert but that approach seems to work often enough for it not to just be a fluke. Maybe there's some sort of statistical analysis that can be done to illustrate how likely it is to succeed...

I find that if you refuse cake then people aren't usually that upset as it means they get to say "all the more for me".

If I was trying to not be fat, which we all should be really. (I try to avoid cake when I can) I would simply say "No I am trying to be healthy".

I wouldn't worry so much about being rude and more worried about being healthy and encouraging your friends to do the same.
 
A most polite refusal could be simply asking if they had any nuts in them or have been made in a place that may have some contamination with nuts, if the answer is no, and you still do not wish to accept the cakes then all you need to do is expose your testicles and rub them into the cakes and simply say 'They do now'.
 
I don't see why you're trying to justify your turning down of their cake, just politely decline, no reason needed.
