So for a duo (with the wife) I was thinking about warrior/paladin or druid/hunter. Will be a very slow and gentle journey to 60, the ability to tank/heal may prove to be better for dungeons but would the hunter druid combo prove to be easier for overall levelling

I've partied up with someone, but we can't see each other, is this a bug? He's level 3, I'm level 9, same area, we can see each other on the map, I can target him, but he's not visible and he doesn't get xp for my kills, I R confused.

I would probably check back on Monday. Different language communities are still deciding where they're going and there's been quite a backlash so you never know Blizzard may introduce more servers (although unlikely at this point).
