My only problem is that this LG is a *very* hungry beast and it could easily eat an upcoming 3080Ti even though it's not strictly needed! So I may jump in at the end of 2020...

You be better off selling the 2 980ti's and putting the money towards a 1080ti or 2060 super or something AMD ( I haven't kept up with AMD cards to be able to recommend any)Currently running two gaming rigs:
Lounge PC: 9700k & 980Ti
Office PC: 5820k & 980Ti
Plan for 2020 is to upgrade the Lounge PC 980Ti to a 3080/3080Ti and put the 980Ti back into the office PC SLI. CPU wise I am happy, considered replacing 5820k with a 6850k but not sure it will be worth it, might just hold off and replace with 10/11 series Intel CPU when prices come down.
I mainly play older AAA titles like Warhammer 2 The Witcher 3 and Skyrim SE. They play okay at 1440p ultrawide with a 1080ti so I'm getting a 5700XT. The only other games I'm looking to get are Doom Eternal, Cyberpunk, and Warhammer 3.I would say you will need more grunt than that.
I have a 3440x1440 120hz, even trying to get stable 75-90fps in BF5 I have to play at medium settings and I have a 2070 Super. At high settings it was dipping down to 60-65 a lot.
It's why I'm looking at a new 3080, wouldn't have bothered on my old monitor (1440p 144hz)
