Throw up between Colin McRae Rally 2, Grand Tourism 2 and Toca Touring cars 2 all for the PS1. Couldn't give a definitive answer because it's been so long since I played any of them. Defo one of them though.

This actually entered my head when thinking about best, but then as usual my brain started to over think it, and i ended up possibly putting Star Wars: KOTOR, which was also awesome. at this point I was in knots so went for the safe option of FF7

I know you said one but if looking at more recent years I'd say fallout 3 simply because i've clocked up around 150 hours on it and pretty much enjoyed it all except mothership zeta.
Going back a little further Diablo 2 again for the huge amount of wasted hours pumped into it.
Going back further still Xwing which i played on something like a 386 or 486 can't remeber which.
