You only need it once, for rooting. Flashing new ROMs won't require a gold card. So root with the gold card, then format it and use it as normal.
If for some reason you need one again, just make it again
(as far as I know)

You most certainly wont, it blows the iPhone out of the water.

Unless you like mind-numbingly simple software, then yes, it's a huge step up. In hardware terms too
It works perfectly on the N1, and bluetooth is functioning properly on the Desire now, so you should be ok.
Cant test it at the moment though

There's all sorts you can do, you'd have to read around on XDA/Modaco for fancy stuff
How are you finding Froyo? Seem stable enough for you so far?
Have you got Apps2SD enabled?
