How do you like your steak?

I have to suppress an involuntary eye roll when people start claiming their prefer their steak "bleu".

I remember when I worked in a pretty crappy steakhouse and we'd occasionally get some try-hard guy trying to impress everyone at his table by ordering his steak bleu. It'd always be accompanied by the said person mocking the rest of the table for wanting it cooked any other way. Then when the food came they'd loudly exclaim how delicious it was. This was the cheapest of the cheap beef, and the said douche would end up chewing each piece for about 20 minutes before he could swallow it.

How about, I just prefer it cooked that way and it's got nothing with "front". I'm not out to impress anyone, I'm not that insecure. If I was pathetic enough to need to establish myself as to how I like my steak cooked, I'd have a lot more important things to worry about in my life.

Obviously that guy's a tool. Please don't tar some of us who have a modicum of taste and experience in gastronomy with the same brush. :)

Good cuts of meat just melt in the mouth, if the guy knew anything about it, he'd have realised the cuts of meat were bad - it's hard to sometimes even get it on the pan as I tend to like to eat it just like that.... I'm not showing off, I don't need to ;)

I love sushi and carpaccio as well as steak tartare. All renown for not being cooked. Perfectly edible to me...

It's not for everyone, granted. However, saying that one is "wrong" is just myopic and close minded.

I think it has far more to do with upbringing and society.
I think people will like most things that are seen as normall food in society and what you have been brought upto eat. Obviously there's always exception. But no where near the backlash you see with such dishes.
 
I just cooked myself a ribeye. I did about 2mins each side, usually using my naff pan that's perfect for medium rare. Unfortunately I was using my new cast iron grill pan that seems to get mega hot and it cooked it around medium. Gutted :(
 
Andrew, next time you make steak flip it every 10 to 15 seconds for 2 minutes. I promise you that it'll be much nicer than the single flip.

I've never been a fan of griddle pans, flat pans are much better - give a consistent heat.
 
Got to be rare.

Damn, the best steak I've ever had was at Gallagher's Steakhouse in Vegas. Amazing. Steak really is the greatest thing you can eat.

Love sushi and carpaccio (one of my favourite Italian dishes). I had fish carpaccio in a restaurant in Cairo a few years back and it was stunningly good :cool:

Tried it for the first time in France last year. Found it a bit grim TBH, as did my OH who loves his steak mooing. It tasted, quite frankly, like I had opened a pack of mince and started eating. The raw egg on the top freaked me out as well.

Can say I've tried it... But won't be trying it again!
 
It obviously wasn't a great one then. Should have your sharpness of the capers in there, plenty of good seasoning, again with the onions etc. It shouldn't just taste of mince. At all.
